Boondi Ladoo:


Ingredients:

Besan/chickpea flour- 1cup
Ghee- 1tbsp
Water-1/2 cup
Oil for frying

Syrup:
Sugar- 1cup
Water- 1/2 cup
Cardamon Powder- a pinch or as required.
Cashewnuts/Almonds/Pistas-  1/4 cup powdered



Method:

  1. First you will have to sieve the chickpea flour, then add it to a bowl, add ghee and water and mix well until there are no lumps.
  2. In a pan add the sugar and water and mix will and cook for 10-11 min on medium flame and the cook further for 2-3 min on low flame. It should be of a 1/2 thread consistency.
  3. Then switch off the stove and add the cardamon powder and keep aside.
  4. Heat oil for frying, once the oil is hot pour the boondi batter on a flat ladle with holes and using a spoon do circular motions and let the batter droplets to fall in oil and fry.
  5. Allow the boondi's to fry until light brown, then put them directly into the sugar syrup.
  6. Mix the boondi into the sugar syrup from time to time.Repeat with the rest of the batter.
  7. Add the powdered nuts to the mixture.
  8. Then allow the mixture to cool, then dip hands in water, shake of the excess and then take  little portions of the mixture and the make it into round shapes (ladoo), continue to make remaining ladoos.
  9. Allow it to cool and store it in an air tight container.
